Choux Au Craquelin | Cream Puff


_Vanilla Cream:_
2 Egg yolks
60g Sugar
25g Corn starch
240ml Milk
Refrigerate for 2 hours
180g Whipping Cream
1Tsp Vanilla extract
Refrigerate for 1 hours

_Craquelin:_
60g Unsalted butter
50g Sugar
60g All purpose flour
Freeze 20 minutes

_Choux Pastry:_
130ml Water
50g Unsalted butter
1/4tsp Salt
70g All purpose flour
Medium heat 90 seconds
Wait for 15 minutes
2 Eggs
Bake at 190℃ for 20 minutes
